Berry-Full Oatmeal Bars

Want to enjoy oatmeal a little bit more? These Berry-Full Oatmeal Bars have two layers full of fruits and fiber. The blend of strawberries, raspberries, and blueberries add the perfect amount of sweetness and texture. Heat up a piece and enjoy a warm bowl of oatmeal on the go!


Ingredients

    • 2.5 cups Oats *
    • 2 cups Milk
    • 1 cup Strawberries, sliced
    • 1 cup Raspberries
    • 1 cup Blueberries
    • 1 Egg
    • 1/4 cup Honey
    • 2 tsp Vanilla Extract
    • 1 tsp Baking Powder
    • 1 tsp Cinnamon Powder


Directions

  1. Preheat oven to 375 degrees. Prepare an 8x8 pan and set aside. **
  2. Mix oats, baking powder, and cinnamon powder in a bowl.
  3. Pour half of the mixture into the pan. Top with half of the strawberries, raspberries, and blueberries.
  4. Add the rest of the oat mixture and then top off with the remaining berries.
  5. Whisk the egg and honey in a mixing bowl until they are well combined.
  6. Add in the milk and vanilla. Whisk for 30 seconds.
  7. Pour the liquid mixture over the oats and fruit. Ensure that all the oats are covered. If necessary, spread the top layer of oats to even it out.
  8. Bake for 40-50 minutes or until the oatmeal is set and golden brown.
  9. Remove pan from oven and let it cool for 15 minutes before cutting.
  10. Serve warm or store for later.


Notes

* I used 2 cups of old fashioned oats and 1/2 cup of steel cut oats.
** Spray with oil or use non-stick foil paper.
- Refrigerate in airtight container for no more than a week.
